Personal Quiches

I adore cooking. I adore it so much that I have had to go above and beyond creativity lately so as to make things that are low-carb and/or low-fat. To clarify, I am dating a 135 lb 5'6 guy who can eat whatever he wants and not gain a pound. Sometimes he even loses weight if I feed him too often.

So really, I needed to realize that I can't eat like him all the time. I am not blessed with his racing metabolism. Either way, here's what I cooked up this morning using some scrap stuff from our fridge.

Recipe:

5 eggs (beaten)
1/2 cup sour cream
3 T butter (melted)
1/2 package frozen spinach
(at least I'm assuming it was about 1/2... like I said, just leftover in the fridge in a little Ziploc bag)
1/2 cup shredded cheddar cheese
Salt and Pepper to taste.

Topping
Shredded Mozzarella Cheese (as much as you want!)

Mix top ingredients well. I found whisking them together works best. Spinach can be added sparingly or in excess, whichever you prefer! I tend to like a lot of Spinach, due to the fact that it's healthy and about the only green type of food I will eat.

Pour into muffin pan about 2/3 of the way full. I used a giant muffin pan for mine, but I'm sure it would work with a regular sized also. Or even a mini muffin pan for Hors d'oeuvre at a get together! Bake in oven at 350 degrees for 50 minutes (probably took much longer in a giant muffin pan as opposed to a smaller one) I baked them until they were lightly browned on top.
