Personal Quiches

I adore cooking. I adore it so much that I have had to go above and beyond creativity lately so as to make things that are low-carb and/or low-fat. To clarify, I am dating a 135 lb 5'6 guy who can eat whatever he wants and not gain a pound. Sometimes he even loses weight if I feed him too often.

So really, I needed to realize that I can't eat like him all the time. I am not blessed with his racing metabolism. Either way, here's what I cooked up this morning using some scrap stuff from our fridge.

Recipe:

5 eggs (beaten)
1/2 cup sour cream
3 T butter (melted)
1/2 package frozen spinach
(at least I'm assuming it was about 1/2... like I said, just leftover in the fridge in a little Ziploc bag)
1/2 cup shredded cheddar cheese
Salt and Pepper to taste.

Topping
Shredded Mozzarella Cheese (as much as you want!)

Mix top ingredients well. I found whisking them together works best. Spinach can be added sparingly or in excess, whichever you prefer! I tend to like a lot of Spinach, due to the fact that it's healthy and about the only green type of food I will eat.

Pour into muffin pan about 2/3 of the way full. I used a giant muffin pan for mine, but I'm sure it would work with a regular sized also. Or even a mini muffin pan for Hors d'oeuvre at a get together! Bake in oven at 350 degrees for 50 minutes (probably took much longer in a giant muffin pan as opposed to a smaller one) I baked them until they were lightly browned on top.

Dear ENV2, I hate you.

Dear My Phone,

I hate you. Sometimes, you are really nice to me. Like when my other phone fell in the bathtub, and you came to my aid just in the nick of time; turning on for me and letting me call/text the people I love. Then sometimes, you would wake me up just a little earlier than I set your alarm for, I knew it was because you realized I would be late to work again. Every once in awhile, you would ring on silent when I forgot to turn you on silent. I knew it was because you picked up on the fact that I was at work and would get in trouble if my phone went off.

Making Conversation in Public Restrooms

I really have come to no logical explanation of why this happens to me, but for awhile now I've noticed that women find it acceptable to talk to me while I am peeing. The more I think about this, the more it confuses me. I am not a very "friendly" person. That will probably be taken the wrong way. I mean that I do not go out of my way to make eye contact with people, smile at people, or talk to anyone unless I absolutely have to. When I happen to make eye contact with people, I feel like I have to give that weird ass half smile that seems to say, "this is absolutely painful to do because I have no idea who the fuck you are." (this smile never shows teeth... you KNOW what I'm talking about) Sometimes, this leads to a conversation of "How are you, today?". This could go one of two ways.

The Neverending Toy Story...2

I have now seen Toy Story 2 at least 20 times. For this, I thank my nephews. Or, in reality, Nathan. God forbid we watch any other "showwwww" besides Toy Story 2. I even volunteered to go rent the original Toy Story! No such luck.

So anyway, it really got me thinking about how much I think Toy Story is overrated. It's a good Disney/Pixar film for sure, but nowhere near my favorite.

My Dad


My Dad.
I can't even imagine where I would be without him.
I started writing this on Father's day, but then I got interrupted by a family baseball game. So, since Father's Day fell on the 20th, here's 20 great things about my Dad. 20 things that make him the best man I know.

  1. He has 10 children. 
  2. He puts up with every single one of us.
  3. He still fishes with the baby of the family, even though when they started he was so tired from running around in the sun playing baseball.
  4. I can't remember a time when he didn't give us everything he had.
  5. He takes us to Cedar Point, where he has ridden so many kiddie rides that make him sick that he probably lost track about 20 years ago.
  6. He works 40 hours + every week so my mom doesn't have to work at all.
  7. He argues with me, but he's almost always right.
  8. He didn't kick me out of the house when he found out I had 2 tattoos.
  9. All he asked for and all he wanted for Father's day was to go to church with every single one of his kids and then eat breakfast.
  10. Out of all 21 years of my life, I can't remember a time my Dad didn't make it to a ballet recital, basketball game, volleyball game, race, or anything else I might be missing.
  11. I know he would do anything and everything for any of us kids.
  12. He and I enjoy 2 things, a good beer, and the Beatles.
  13. He is a man of God.
  14. He loves my mother.
  15. He is always quick with a joke to light up our day.
  16. He says good morning every day to me, even if that means being late to work.
  17. He sleeps on the couch on nights that I go out, making sure that I come in OK.
  18. He knows absolutely EVERYONE within a 50 mile radius.
  19. He built us a tree fort when we were little. He also built our house.
  20. He taught us how to add and subtract, play sports, and hammer a nail. We're very well-rounded children. At least I'd like to think we are.

1. Gone with the Wind. This movie will never get old for me, not even one minute of the 4 hours. I find that I relate with Scarlett a lot, which is probably why. Maybe not entirely, as Scarlett was kind of a heinous bitch to Rhett. So not in that way, but she's certainly free-spirited, loves her home, and a little bit of a firecracker. I am all these things.

My Awesome Monday is... 
Finishing races and getting runners high.


I have officially run my first 5K since high school, (3.5 years, btw)  finished it, and did not die! This is a good thing.

Next Up: Lodi Corn Festival 5K
Goal: 29:59 or better
Date: July 17

I didn't prepare for the Bob Bridges. I will train or at least start running every day for the Lodi Corn Festival and I will break 30.

7:31 - Maybe I should start running again, I'm almost at the finish. If I am not out of breath, my brothers will think I'm wimpy.

Recap of my Friday

I woke up to birds chirping, because my alarm didn't go off. Immediately, I start freaking out because I have this REALLY important interview to go to and I have to look real damn good! A quick glance at my phone tells me I am completely fine because I've got an hour and a half to get there. Crisis Averted.

I go to the interview, I do an absolutely amazing job at making myself sound fantastic. I then go into town, get some gas, break my phone, and realize that I really don't want to go into work. I call in, ask my boss how it is today, and she goes "it's really not bad, you don't have to come in if you don't want to". NICE. Another crisis averted. (Plus, I wanted to be home in case I received a call about a second interview!)

Then, I proceeded to go to Sara's and Anthony's house because I needed to use a phone. I would like to say it's because I wanted to visit my sister in law on her birthday, but I completely forgot. For that Sara, I apologize. Happy 26th!

While there, I was greeted with this hunk of baby cuteness.

run? ran? raced?

I'm supposed to be running a 5k this Saturday. Let's focus on why that sounds like a good idea to me. One, this is not my first 5k, quite the contrary. I have raced (ran?) (run?) many 5ks . I know how to do it. I know how to pace it. Two, I am more in shape now than I have been in a long while, so why not? Three, my entire family usually runs this race. It's a family affair. I haven't ran it in 5 years, I think. This means I'm ruining the family tradition. Fourth, I want to see if I can still do it.

Ok so there's the reasons why running this race on Saturday sounds like a good idea. Now, let's focus on why it's probably NOT such a great idea. One, I've been saying that I'm going to run this for six months now. In those six months, I was supposed to start training at LEAST a month ago. Have I? Not one bit. I've been on my lazy ass doing absolutely nothing.(I work a LOT! I have two jobs! Don't Judge me!) Two, Due to lack of training, I will most likely fall over and die/not finish the race/walk the entire thing... which is a problem.

So you see? I am in a pickle. Though it seems more logical that I stay home, eat my chocolate cake and s'mores and wait for the FAM to get back from the race, there seems to be more pros than cons listed up there. So, I am running a race on Saturday. This will be my first race since October, 2006.

So I'm going to need a lot of luck, and perhaps some perseverance on my end. (Oh, and maybe the ability to get off my ass this week and at least semi try to prepare, a little bit at least)

TGIF... & Also WTF?


There is so much wrong with these pictures. On so many levels. This really makes me lose faith in my generations knowledge of what a "FANTASTIC" film is. Let's just get this straight, fantastic films are like those listed below... See disclaimer #1. Let's just say, the only reason these movies make money is because girls think that the epitome of love and all that is good and holy in this world is Edward Cullen. Or as our Blue dress clad girl up there is showing, Jacob Black.

I don't know about you, but I'm DIEING to let Edward smell me, hoping against all hope that I smell better than Bella Swan, and also hoping that he might kiss me until he wants to bite my neck and suck my blood until it runs dry, COULD I BE SO LUCKY? See disclaimer #2

I mean really, girls. Have you no pride? Do you not realize that Edward Cullen and Jacob Black and ALL THAT EXISTS IN THE TWILIGHT WORLD IS FAKE!? I mean, sometimes I wonder about the sanity of my generation, that's all I'm saying. Taking a CARDBOARD CUTOUT TO PROM? You are forever going to be "THAT girl". The one who's a psycho maniac, the one who thinks a fictional character is real, the one who brought a fake date to prom. Losers. Sorry, it's what you are.

Now, I mean nothing against Twilight. I find the books and the movies entertaining, though the movies lack in any sort of acting skills whatsoever, unless you're talking about Billy Burke. & Don't even get me started on Kristen Stewart and her acting skills. I mean nothing against them, the hype is just getting ridiculous. Please stop, for everyone's sake. Thank you.

Plasma: A Love Story

So I was at the Plasma Bank yesterday, which I understand is a new college low for me, so don't make fun.

While at the Plasma Bank, I couldn't help but notice that there was an odd couple there.

Now, I shouldn't call them an odd 'couple'. They were obviously not together and seemed to have just met. I call them a couple for lack of a better term to call two people. So I suppose I could say "I couldn't help but notice these two people". This phrase, however, doesn't give them the right kind of description either because they were more a 'couple' than they were not. (yes, I am aware that my logic usually doesn't make any sense)

    • This is most common. I am literally called Mary Ann at least 20 times a day. This is no joke. When I ask my respective bosses if I sound like I'm saying Mary Ann on the phone, both say no, no you do not. Meaning, people seriously just don't listen properly. I can't tell you how much this annoys me. If anyone is reading this named Mary Ann, I do not mean any disrespect towards the name, it's a nice name. It's just not mine.
